Ingredients: Hard boiled eggs – 5 (cut into medium or small pieces)

Tomato – 1 (cut into small pieces)

Onion – ½ (cut into small pieces)

Capsicum – 1 (cut into medium or small pieces)

Coriander – 2 tablespoons (finely chopped)

Olive oil – 2 tablespoons

Salt and pepper – to taste

Preparation: Heat the oil in a pan, and sauté the capsicum and onion until the onion becomes golden brown. Use a bowl to mix this with the eggs and the tomato. Chill. Season this with coriander, salt, and pepper before serving.

The Leftover Paleolithic Combo:

Ingredients: Any leftover grilled meat – Depends on how much you’ve got

Hard boiled eggs (chopped)

Celery (chopped)

Tomatoes (chopped)

Balsamic vinegar

Preparation: The quantity of all the ingredients would depend on how much meat you’ve got leftover, so this is something you can work on. Mix the eggs, celery, and tomatoes in a bowl with the vinegar. Serve the meat with this mixture. The meat can be served cold, or you can reheat it in an oven.
